Watch Out Claim Jumper!!!!

My sweet friend Missy shared the most delish Baked Potato Soup recipe with me......
Yes, it is a crock pot recipe :)
I swear this soup gives Claim Jumper's a run for their money.
I added a shallot and the onion is key!

You should try it on the next cold, blustery day!

Baked Potato Soup




9 medium-large russet potatoes; peeled and chopped

¼ cup butter

1 small onion; chopped

1 shallot; chopped

2tsp salt (I use way more)

1 ½ tsp pepper (I use way more)

3 14oz cans Chicken Broth

8oz Half and Half

16oz shredded cheddar cheese

Bacon; cooked and crumbled

Chives; chopped

Sour Cream


1. Put potatoes, onion, shallot, s&p, butter and chicken broth in Crockpot for 9 hours on low (4 hours on high).

2. After 9 hours, use potato masher to mash potatoes until almost smooth…leave lumps!

3. Stir in Half and Half, chives and cheese.

4. Top each bowl with selected toppings!

5. Enjoy!!!
